The Undervalued Superfood: Eggs

I have a thing for eggs. I just love them! There is something so gratifying about having such lovely hens and ducks, taking care of them, and collecting these perfectly beautiful, healthy and nutritious nuggets from the nesting boxes as a reward each day.
And when you consider the perfection of an egg as a food - one egg contains everything needed for a chick or duckling to grow. They are perhaps one of the most nutritionally perfect foods available. Eggs are high in protein, vitamins A, B2, B6, B12, D, E, K and Lecithin. They are also a great source of selenium, zinc, iron and copper.
When birds are allowed to roam freely and eat a diet high in greens, like ours are, their eggs are also high in Omega-3 fatty acids, which are so valuable for our bodies. In addition, eggs are considered a complete protein because they contain all 9 essential amino acids. Essential amino acids must be obtained from our diet, as our bodies cannot synthesize them.
Not only are eggs nutritionally dense, they are simply beautiful! Each egg has its own character - speckles, texture, various shades of brown, tan, blue or green, some are larger, some smaller - but each following the basic guideline of an egg; oval, pointier at one end, rounder at the other end. Simple perfection!
