    Making Duck Oil

    Duck is probably our favorite thing to eat! We hatch all of our own ducklings, and they grow up ranging freely on pasture. When we cook duck, nothing is wasted.

     

     

    Duck Fat CubesHere is how we make our duck cooking oil:

    1.  Cut duck fat/skin into small cubes.

    Duck Oil-22.  Cook on low temperature while it melts into oil.

    3.  Pour oil into jars (this will solidify when it is cooled).

    4.  Season remaining skin with sage, salt and pepper.  Then finish cooking the remaining chunks on higher heat until slightly crispy for a snack right away - our kids call this "duck bacon" - similar to pork cracklins.Duck Bacon

    Duck oil is about the healthiest animal fat for cooking, can be used for high temperature cooking, and is oh so tasty!
