Spring Salmon with Lambsquarter

Fresh Lambsquarter is one of Spring's greatest wild foods. High in Vitamins A and C, its similarity to spinach makes it entirely versatile. Use it in salads, casseroles and soups, or feature as a solitary steamed vegetable.
This is a dish we made with Spring vegetables and herbs from our gardens.
1. Rinse lambsquarter, and lightly chop into manageable pieces. Place in 9 x 13 glass dish.
2. Place salmon fillets on top, and sprinkle with fresh dill, fresh chives, fresh cut radishes and fresh mushrooms. Sprinkle with salt.
3. Bake at 350 for 15-20 min, until salmon is done.
4. Serve on a bed of rice, and perhaps a warm glass of Sake rice wine.
