Rabbit as a Food Source

People don't get much opportunity to eat rabbit meat anymore. But before the mid-1900s, rabbit was as common on the dinner table as chicken was. Our family values the efficient, lean, high protein meat of the rabbit. Rabbit can be used similarly to chicken, but the meat has a tasty twist that separates it from chicken. It is high in lean protein, calcium and phosphorus, while being low in fat, cholesterol and sodium. Try it with some of the recipes we've baked up in our kitchen!
